CORE Resources' relationship with Jeff Ruby Culinary Entertainment began with the first Jeff Ruby’s Steakhouse located at 7th and Walnut in downtown Cincinnati. The relationship grew as CORE constructed another Ruby Steakhouse concept - Carlo and Johnny in Montgomery, Ohio. The collaboration met its greatest challenge, though, with the 6,000 square foot restaurant located in downtown Louisville.
CORE collaborated with designer David Stevens and Architect P. Gerald Foote to help create a vibrant physical space to delight Jeff Ruby’s guests. Located on the first floor of the historic Galt House Hotel, the challenge was to build a kitchen addition into the existing building, matching the existing exterior finishes, cutting into foundations and running mechanicals all during frigid winter months and all within a tight construction schedule of four months. Work began in January and was completed by the end of April in order for the restaurant to be open for the early May running of the Kentucky Derby.
The restaurant picks up the 1940’s art deco look and feel while borrowing heavily on the local history of Louisville with references to Churchill Downs, the Derby and Mohammad Ali. A large millwork and wood trim package along with the extraordinary color scheme has a significant impact on the dining guest. A shark tank and extensive lighting around the bar sets the perfect ambiance for a one-of-a-kind dining experience.
